100% Yamada-Nishiki from Hyogo Prefecture is used. In the mouth, it is more crisp and dry than mellow. I really feel that Yamada-Nishiki does not change its sharpness even if it is made into a Daiginjo. My aunt bought this for me when I went on a trip to Hyogo Prefecture. It is not cheap because it is a daiginjo, but it is so delicious that it is not overpriced. It was a bottle that made me feel the underlying power of Yamada-Nishiki.
