At a sake tasting event at Kintetsu Department Store, I was told that our sake is generally called jyoshu (women's sake), which is easy to drink, with low acidity and good mouthfeel.
Compared to sake tasted by other local breweries, our sake was indeed more smooth, gentle, and easy to drink. This kind of event makes it clear ^ ^. I was also glad to hear that the Bizen Omachi rice they use can only be polished to a maximum of 50%, and I enjoyed talking with them about many other things.
The aroma was slightly pleasant, with a refreshing acidic base and a clean pool of umami. It was a delicious sake.
