The normal Junmai Daiginjo has a 50% yield, and this sake is polished to 40%. This sake is polished to 40%. Of course the normal sake has a beautiful ginjo aroma. It has a clearer ginjo aroma. It's hard to describe, but I'd say it's the 100% pure aroma of sake.
As for the taste, it has the typical Kido taste, but it has a slightly harder impression because of the polishing. However, the strong aroma makes the taste refreshing and good.
