<A gorgeous, bitter-sweet, adult, beautiful woman. Following the previous Jikin Nigori, this is Aizan, the diamond of sake rice. What a wonderful comparison. The aroma is a gentle banana melon. It was shy at first, but as it warms up, it stands up more and more pleasantly. The mouthfeel is a smooth green banana acidity. The palate is a gorgeous bitter-sweet deliciousness. The bitterness is at the forefront, but it has depth. It is an adult bitterness with a past, different from the cute bitterness of nigori. It is sweet and beautiful, but it is also very penetrating. It's very tasty. At 5 degrees Celsius (snow-cooled), it is mainly gentle sweetness, and at 10 degrees Celsius (cool-cooled), it is mainly sourness. I liked it best when it was at around 15 degrees Celsius, when both flavors were well developed and the aroma was full. If I were to use a Ghibli analogy, I would compare it to Yoshiko Matsuzaki in "From Up On Poppy Hill. She is the mother of the main character, Umi. She is an adult woman who knows bitterness.
