This sake is from Gifu Prefecture, but is made with Hokkaido sake rice, Ginpu.
Browsing the web site, I found that it is brewed with German white wine yeast.
The alcohol content is 11 degrees.
It is unusual in many ways.
......The fermentation in the bottle was amazing.
When I tried to open the bottle, the lid flew in the air with great force.
The taste is quite juicy.
It has acidity and sweetness like a combination of sparkling wine and sake.
It looks like it would be good as an aperitif.
It is a very sharp sake, as it calls itself "Gaiden!
