In the vein of Takachiyo, which is a sweet-umami/pink label, I'm going to go with Aizan from Akabu today! (Actually, it was Sake Mirai I was going to buy before, but I bought Aiyama by mistake 😭) 50% polished Aiyama from Hyogo Prefecture, 15% alcohol by volume The sound of opening the bottle is "f de pon pon" ♬♬ It's so brisk 😊. A little bit of fine bubbles in the glass 🫧. The top aroma is sweet honey apple 🍎 and a little pineapple 🍍. The faint tangy aroma is alcohol? Or is it koji? On the palate, there is a mild acidity and umami for a sweet sake. There is almost no bitterness. I have the impression that it tastes better when the temperature rises a little. It doesn't reach the excitement of last year's Sake Mirai, but this is delicious 😉.
