At room temperature. Salty texture despite being at room temperature. Similar in flavor weight to the Matsuo from the other day. Cooked rice does not smell so much in the mouth. Somewhat refreshing sourness and aroma like honey apple. Soft, fine, slightly pale rice flavor and a bitter aftertaste that tightens the contours of the finish. The red flounder stewed with a hint of sansho (Japanese pepper) is a great match. The sake was chosen to match the dish. The master is a little scary at first sight, but he is very considerate.
