I opened this bottle, which I have put aside for a year, on the occasion of Valentine's Day. As I write this, White Day has passed....
The aroma is a hint of honey apple. The full-bodied aroma is a bit like that of kijoshu, isn't it?
When you drink it, you first taste sweet apple and umami, and then the acidity finishes it off nicely. The aftertaste is clean and crisp, with a slight alcohol taste that is a bit sharp.
Although it has a clean aftertaste, the sweetness is still strong, so it may be acceptable to have a slight kick. However, when chilled, the alcohol feeling decreases and the smoothness increases. This is also good.
It is sweeter than other kijo-zake I have had, but it has a nice sharpness that makes it easy to drink. It has a lot of umami, which is typical of tazake, and is just right for dessert.
This time of year is kind of a flurry of activity... I'm trying to get the sake I've accumulated up. 😵💫
