In the Kansai region, leatherfish are called "hage" for some reason. However, it is not enough to call it "hage" without knowing when and where to say it. A sensible adult should be able to judge the occasion, and be considerate enough to say "kawahagi" instead of "hage," and that is what a sensible adult is. The same goes for sake. We tend to drink everything cold, but there are certainly some sake that need to be heated to show its best qualities. My favorite Kikuhime is no exception. Drinking it cold is a death sentence, but when warmed up, it is surprisingly delicious. But if you warm it up, you will be surprised at how much better it tastes. Tonight I'm having it warmed up with some sukiyaki meat that I bought at a 20% discount on Niku Day. Degree of liking 10/10
