Purchased at the Hankyu Sake Brewer's Festival after hearing the brewer say, "This is what we call a perverted sake" 🤣.
He said it was too acidic to drink unless the sake level was raised.
We will drink it cold.
The color is quite yellow, like a strong whiskey with water, or maybe plum wine is better.
The top aroma is a sweet aroma of rice and a mature aroma similar to that of Shaoxing sake.
The mouthfeel is smooth, and the matured aroma leaves the nose as soon as it enters the mouth.
The slight sourness and mildly matured sweetness are a perfect match.
There is a slight bitterness before swallowing, but it is washed away by the mild sweet and sour acidity.
The rice is milled at 85%, which is a daringly low milling ratio, and the ratio of rice malt used is said to be about 4 times higher than usual.
The description says 2019, but it was made in 2022, so I guess it has been aged for a year 🤔.
It's a little bit peculiar sake.
