My father's choice, Shichibonspear Junmai.
I've had it before, cold.
It is dry and sharp when drunk at room temperature.
Taste it lukewarm. It has a gentle umami of rice. It's good at this level.
It may be too harsh if the temperature is raised too high.
Pair it with tuna and aji no tataki. Nice.
