This is a one-time fire-brewed Matsuo Jiman, a limited local brand of Kangiku.
The label did not give detailed specifications of the sake rice, etc., but according to the website of Yajima Sake Brewery in Funabashi, Matsuo-Hojiman uses yeast No. 14 (while Kangiku uses M310 yeast). (Kangiku uses M310 yeast).
I had it cold 🍶.
The aroma is soft and sweet on the nose.
It is juicy and sweet with a hint of Kangiku in the mouth.
I felt it was a shame to keep it as a local only sake.
I would like to try it in the early spring when they release fresh sake 🤔.
