寿梨庵
My favorite Koshino-Shiragan. My impression of the brewery is that it is honest and classic. I thought it was an ambitious sake from such a brewer, so I ran to a special agent.
It has the sweetness of koji and a light grape-like flavor. It's definitely wine-like, but it's definitely sake. On the first day, it seemed monotonous and unpredictable. However, after a few days, it seems to have opened up and become fuller. It has a gentle sweetness and a beautiful acidity. It is not mentioned in the description, but it seems to be Koshitanrei.
As the temperature rises, the sake flavor clearly increases. If you want to enjoy this sake to its fullest, chill it.
