This is the first time I have tasted a Jikin made from the original brewing process, and it has a rich taste with sweetness and spiciness. It is a sake with a completely different flavor from regular Jikin. I prepared only light-flavored snacks, but it would be good to have more dark-flavored simmered dishes as well.
