When the bottle is opened, it has a "sous-pop" feeling.
Slightly gassy
It has a faint yogurt-like top note.
The discreet apple-like aroma, the same discreet sweetness, and the mild umami of rice spread quickly with a lactic acidity, and the wine quickly clears up with a slight alcohol taste.
It has an assertive acidity and a dry, refreshing feeling, and I think it is more suited for a mealtime sake than a stand-alone sake.
I let it sit for about a week to test it out, and it lost its gassiness, gained more flavor, and developed a grape-like fruity aroma. It tastes better than it did right after opening the bottle.
The label seems to have been inspired by the stained glass windows of the churches scattered around Hirado, Nagasaki.
The impression of the light coming through the glass makes the churches seem like heaven.

It went well with hamburgers, fried shrimp, cream croquettes, and chilled tofu.
It also went well with Neapolitan noodles made with ketchup, which is very popular these days.
