YSTJNabeshima Junmai Ginjo Blossoms Moon. Last year's Blossoms Moon was served chilled, but this year, it was uncorked immediately after purchase (the correct way to enjoy it). The top aroma is like a blooming floral scent that foreshadows the arrival of spring, with a hint of chili and a sweet berry-like overtone. The rice used for the sake is Tajima kyoryoku, and while the sweetness and umami of the rice gradually spreads, the impression is tightened by the bitterness that is typical of Nabeshima. Although the weather is still cold, we could feel the arrival of spring with this spring sake!
