Takatsugu
Kochi sake, which has been a great help to us during our long expedition this year. We opened a bottle of "Kure" hiyaoroshi, which we came across at a local liquor store.
The first sip had a beautiful umami that spread after the acidity that tightened up the mouth. As the temperature drops, a friendly soft umami comes out, making it easy to pair with food as a mid-meal sake.
A bottle that makes me look forward to my expedition to Kochi. Delicious: ❗️
