It's been a while since I've had a ginjo-shu. Summer sake for hot and humid days. ☺️
Let's start with the first sip. The aroma is a little like green melon. Also, I can faintly taste some koji at the back of the nostrils.
In the mouth, it has a smooth and refreshing taste with a good fruity sweetness and a bitter taste at the end. The bitterness is stronger than expected.
Serve with fried eggplant with minced pork 🍆. The sweetness of the minced pork enhances the sweetness of this sake, but I think it leaves some bitterness in the aftertaste. Maybe due to the climate and humidity 🤔.
