NEO Daisen is said to have been stored at low temperature for more than 30 months to boost (deepen) its flavor, aroma, and mildness. Well, the aroma is not that long. There is a faint aroma of pear. The mouthfeel is very soft, mild and juicy, so there must be a lot of acidity, but I don't feel it too much. It's supposed to be good warmed, so I tried heating it up. The softness increased and it melted on the tongue, leaving a gentle sweetness. What a great all-around sake! Now is the perfect time to warm up sake!

Good evening, Mr. Sakezan. I drank a lot of different kinds of sake, but I did not keep notes. At my son's suggestion, I made a spreadsheet (Excel) showing prefectures, breweries, and brands, and I found that I was drinking a lot more than I had thought. I made use of the sake ranking and so on.

Thank you. I'll take that into consideration. I wish I could drink sake as much as I do beer, but I think my limit is 5-6 bottles a month. Well, I should just stop drinking other alcoholic beverages.
