It has a mineral aroma. It gives the impression that the water must be good as well as the rice. The aroma is very subdued and the taste is clear and simple, making it very easy to drink. It was one of those bottles that I can understand why they insist on making it a sake for eating. PS: The taste seems to have changed quite a bit on the second day. I think the acidity has become more prominent... cheese-type?
