The 3rd bottle of the New Year 🎍!
I opened a bottle of Hachitan-Nishiki (Hachitan Nishiki) Nama-zake (raw sake) from Jikin, a brand in my personal Hall of Fame!
When you open the bottle, you can smell the ginjo aroma that is typical of Jikin ✨, which is still consistent with the fruity aroma of apple 🍎... 🤤.
But I honestly don't think the difference between hi-iri🔥 and nama-shu🫧 is that big 🤔.
I've been drinking a lot of Jikin and I don't feel that strong shwashiness🫧 in other nama sake except for "Tokujun no Nigori Sake Nama" 😅.
I don't think I feel that strong squishy sensation 😅. I don't feel it 💧.
However, the harmony of sweetness and umami that comes from the smooth mouthfeel 🎻 is still there.
The lingering aftertaste and the sharpness of the finish that permeates through the mouth is unbearable 🥰.
If I had to say something, I would say that this Hachitan-Nishiki has a subtle bitterness in the aftertaste (just the right amount).
Oh well...it is generally delicious... 😋.
I don't remember which label was the first Jikin I drank... but I still can't forget the shock of that time, even after more than 10 years... 🙂↕️
The 2nd day: 🗒️
The sweetness and umami are up so much⤴️😳
And the slight bitterness in the aftertaste that I felt on the first day is less ✨.
In general, I personally recommend the second day 🥰.
