At a favorite bar, I asked what kind of sake they had today. This one came out and I opened the bottle.
It is a sake with a richness, umami, and acidity that makes it ideal for heating up. But it was also rather refreshing cold, perhaps because of its sharpness.
Persimmons and sake go well together.
The persimmon was served to us as a complimentary drink, but it was a nice encounter.
