I visited to see if they still had some of the Kangiku Haruhi, but they said it was gone, so I bought this one. It is about time for the Kangiku I drank last year to be available again, and I wonder if I should check the difference from last year or look more into another brand....
This sake has sweetness and umami with a bit of bitterness, or rather, Eiko Fuji often seems rather like Kangiku. I like this strain, so I don't mind.
When I bought this sake, I was allowed to compare it with the same brand that was sold last year and aged for a year at the store, and I was surprised at the considerable difference. I don't know if it was the effect of aging, the quality of last year's wine being better, or both, but I thought it would be fun to try aging it at home. I don't have a refrigerator;
