The first Shinshu Kamerei. Clear color and just enough bubbles to fill a cup. It has a cemedine smell, a slight sweetness, and a little umami. Maybe it was because it was a food sake, or because it was a junmai sake, or maybe my expectations were too high, but I got the impression that it was nothing like this. I guess expensive ones are different. It was a bit of a disappointment after all the trouble I went through to get it. It's not that it's bad. It's just that the smell doesn't match. Expect it to change over time.
On the second day, the cemedine smell disappeared. It was sweet and tasty. It was not thin, but sweet and tasty. Is this as good as the reputation? The sweetness and umami are close. It became delicious.
