Kyohime Sake Brewery is located in Fushimi, Kyoto, where the water is especially clean. We were served their Junmai Daiginjo spec.
The basic taste is gentle and typical of soft water. It also has a sweetness and umami of rice. It is a beautiful sake that is more classic than fruity. It is easy to drink and has no strange habits. It also has a hint of melon.
It is good with Japanese food, such as simmered dishes. It is also good with sashimi and sushi.
