Daishichi Minowamon" is a Junmai Daiginjo made from Yamada-Nishiki rice polished to the highest degree of finesse using ultra-flattening rice polishing technology and made into a Junmai Daiginjo in the sake brewing process, which has achieved unprecedented refinement, smooth and precise texture, and a fragrance that seems to be unleashed. The rice used for this rice was so transparently flat that it exceeded even the expectations of Tomio Saito, the inventor of the flattened rice milling theory, who called it "my ideal milled rice. Based on this result, we have completely abolished the conventional rice milling method and have adopted the super flattened rice milling method for all of our products. In Japan, Daishichi Minowamon has won gold medals in the "Ginjo" and "Junmai" categories of the Tohoku Brewer's Association and the "Gold Award" in the "Junmai" category, and overseas, it has won the praise of professionals at the VINEXPO, the world's largest beverage exhibition held in France, and at top restaurants in New York City.
