It has been two seasons since the brewery moved to Hokkaido, and the brewing process has become more stable.
Even though the Comet, which tends to be light, has been polished to the Daiginjo level, it still retains a good amount of umami and has a delicious, rich aftertaste.
I was a little concerned about the sweetness in the latter half of the bottle, but I was able to enjoy a good marriage by combining it with food.
I enjoyed it very much😋.

Yes, we are a sake brewery from Gifu.
They still use Aizan, which is well known in Gifu, and they are also trying to blend in with the local community by experimenting with Comet and Kitashizuku, which are good rice for sake brewing from Hokkaido🎶.
