YYIt is light and fresh, yet gentle. The sweetness, acidity, and umami are moderate, but it is not light, and it is really delicious.
The slight gassy sensation when the bottle is just opened is irresistible. I was surprised that it was fire-brewed. I was tempted to drink it all at once, but I held back and let it sit for a while to enjoy the changes. It is a very good food sake.
