Purely personal memorandum 1)
At restaurant #1, which I visited for the first time at the beginning of the year.
No notes, but just checking in because it was delicious 🙇.
First, Takudra No. 3.
Kikumori Brewery is a daily monitor of President Fujimura's Instagram, where you can see the daily brewing process, the meetings he attends, the hotels he stays at, and even his lunch of cup yakisoba and his Splatoon Udemae 😁.
Takudora is a sake made with koji from Reimei Hiraizumi, yeast from Yuko no Moui, and rice from Kakehashi, the first original rice paddy in Iwate.
Although they do not use words such as "terroir," one can sense the love of locality in their sake brewing.
The taste memory 🤔.
The aroma is extremely mild, the smell of rice wine 🌾.
The attack of the 18% alcohol original is like a tapping of the senses that have become accustomed to low-alcohol modern sake.
The attack of the 18% alcohol sake is like a tapping of the senses that have become accustomed to low alcohol modern sake, yet it also has a penetrating gentleness, and the umami of the rice is thick amidst the acidity and alcohol stimulation.
I remember thinking, "Oh, I'd like to try this heated." I remember thinking "Oh, I'd like to try heating it up.
It was the kind of sake where it is polite to drink it with a teacup, while holding a bottle in your arms, and yet there are glimpses of delicacy and gentleness 🍶.
