3. Koei Kiku's Tsukishita Muyori. It has a gorgeous aroma on the palate, but the sweetness and umami are light and the aftertaste is spicy. The name "Muyori" is exactly what it sounds like. Kame-no-o, unfiltered, unfiltered, raw sake, about 2000 yen, Otsuka Sake Brewery in Honmachi.
