The 5th Shinmame Festival, the 5th Kami Ongaku Mie Shinshu Matsuri㊱. Slide sideways to the Gozenshu booth. The brewer was there. They have been all Omachi brewery for a few years now. After listening to the explanation, I decided to compare a freshly squeezed Bodaihashi with a one year aged Bodaihashi. Gozenshu Bodai-Hashiroshi Nigori Unmatured Sake Freshly pressed a week ago. It has a fresh mouthfeel with a juicy acidity. Sour and milky at the same time. Alcoholic and bitter. Gozenshu 1859 Bodai Hashiroshi Yumachi, fire-brewed This one has been aged for a little over a year. The wild and powerful flavor of the Omachi has been rounded out with a supple and strong flavor that is well balanced with the acidity. It has a deep flavor that can also be served warmed.
