Keiraku Junmai Ginjo Hi-ire
This time of the year, the unfiltered junmai ginjo of 寫楽 goes on sale, and I can't go out to buy it until I consume it because the rest of the refrigerated bottles are already full. I'm sure it will be sold out before I can go out and buy it. Sake is a once in a lifetime thing, so I hope I can buy it the next time I find it when my fridge is empty. But I think I'll buy Hana Yokuyo when I find it.
So, here it is, 寫楽 Junmai Ginjo, once-hired. Since it is fire-aged, the overall flavor is subdued. The rice flavor and sweetness are elegant. It has more acidity than Hanayuyuu. It is delicious. You can never go wrong with 寫楽.
