Hirakou Sake Brewery's Hitakami, which I have been a big fan of since the Sakelabo 10th anniversary event. This is the autumn harvest.
It has the image of a clean, dry sake that goes well with fish, but this one has a mellow flavor like the collaboration sake with Tomita Sake Brewery that we had at the event.
I have the impression that the aging process has mellowed the flavor of this sake, but I like it.
It is not sweet, but just mild enough to give a good sense of umami, which is my favorite flavor.
I love fruity sake like Senkou, Shinmasa, Koeikiku, and Kangiku, but I also love dry, mellow sake like this.
I would like to have this kind of sake again.
