Today's second bottle is Kitayuki from Sado Island in Niigata Prefecture: ☃️
Last time I drank Kitayuki for the first time... I had a personal image of it as the best sake for a meal 🍶 with its sharp taste even with oily food such as yakitori🐔.
I was excited to open a bottle of the draft sake, as my personal image of Kitayuki was firmly established: ☺️
As expected, the aroma is only faintly noticeable since it is a less polished junmai (pure rice). It is not very strong.
And when you take a sip, you can hardly feel the piquancy of the raw sake... but...! Hmmm! 😳
While feeling the sweetness on the tongue, when swallowed, it has a complex interplay of bitterness, moderate spiciness, and sharpness like a dry 🍺 throat, which is also... delicious 😋.
I think even those who are exclusively beer drinkers will be satisfied with the taste. ❗️
I think Hokusetsu can be used as a food wine, and can be drunk in place of beer 👌👌.
I have a strong image of Shinzawa Brewery who brews Hakurakusei and Atago no Matsuri when it comes to food sake...but I like Hokusetsu because of its different taste 😁.
ps. I'm drinking it in a wine glass for the sake of drinking, but I recommend a boar's mouth 🍶 lol
I'm going to report on the second day!
The dry bitterness that I felt on the first day is lessened and the umami is slightly increased ⬆️ 😁.
This is pretty good ✨
