I happened to choose this one, the last sake in the Omachi trilogy series 🍶 and it is made with Omachi wild yeast 🧐The top-tasting is modest with a sweet grain aroma 🤔It has a gentle sweetness, acidity, and a soft, tender mouthfeel with a moderate bitterness. After drinking it down, a good richness spreads with a lingering aftertaste. The taste is more classical ❓The homemade rakkyo (rakkyo is a Japanese traditional food), levanilla, and yellowtail sashimi ◯.
