Basically, it's a sake exclusively for restaurants, but we sold it for a limited time on Makuake, so this time we're trying out the fourth edition, SUSHI!
The aroma is floral and a bit melon-y.
There is also a slight citrus acidity.
The taste is soft sweetness, a little bitterness, and fruity citrus acidity.
It tastes ok when drunk on its own, but the flavor is not very distinctive and seems a bit flat.
Of course, I tried pairing it with sushi, and it was indeed quite different from the sake on its own!
First of all, it surprisingly enhances the sweet and savory flavors of the ingredients, and is especially good with white fish, octopus, shrimp, etc.
The acidity and minerality of the sake, together with the vinegared rice and soy sauce, create a very three-dimensional flavor, making both the food and the sake even more delicious, a perfect marriage!
I found myself more than halfway through the bottle... even though it is not a dangerous type of sake at all!
It's worth a try if you want to experience a professional's idea of marriage!
Well, I think it's best to drink it at a regular collaborative restaurant.
