The pleasant bitterness and flavor spread out and then slipped away.
The snacks were cream cheese and raisins pickled in sakekasu made by my best friend. Blue cheese is not shown in the picture.
The bitterness of these snacks enhanced the flavor of the sake, and the bitterness of the sake lees and blue mold that lingered on the palate was easily swept away.
This is another truly delicious sake I have encountered.
