The southernmost tip of Ishikawa Prefecture,
Matsuura Sake Brewery, a sake brewery in Yamanaka Onsen, Kaga.
We bought a bottle of sake at this brewery as part of our visit to the hot spring resort area. We had originally planned to enjoy a sake comparison at a nearby bar in the evening, but we gave up due to lack of time. I would like to have a second chance,
But Yamanaka Onsen town is clean, spacious, and fun. I would like to go back.
I chose a junmai sake with a lion (probably) on it. The label is also cute, with an owl and an ogre on it.
The aroma is gentle, with a hint of banana,
The taste is light, with a pleasant acidity and astringency,
It has a light, refreshing, umami acidity, astringency, and a crisp, dry taste,
It is a good match for Japanese food as a food sake.
When heated, it is quite acidic and has a solid dryness,
It is said to be a sake that warms up well, but personally, I prefer to drink it cold.
The umami mellows out as the day goes by, making it easy to drink.
