Kamonishiki Nifudazake Geppak
A light, dry, elegantly aromatic food sake. I think it is delicious, although I don't really like the taste.
The young toji, Yuichi Tanaka (born in 1992), is a self-taught sake brewer who started a new challenge while learning to make sake, and his Kafudazake sake became a big hit in 2015.
Kamo City is called "Little Kyoto in Hokuetsu," from which the name "Nishiki" for sake is said to have come.
