Shinshu Kamerei, or Shuki for short 😍💕 I've had the summer Jungin Hitogokochi but this one is new to me. This one was also rolled up from an uncle in Nagano... and I got it 🙄. It is jungin but has the same ginjo aroma as jundai. It is a delicate and clean type of ripe peach or tropical fruit. At the end, you can taste a slight rice richness, but this one is also beautiful! The sense of effervescence is slight, and when you drink it, you directly feel the sweetness of fruits like peaches and red apples! There is an astringency in the mid-palate, with almost no acidity, and a pleasant aftertaste that passes into the mouth and disappears without any change. It is fruity but not too much. I feel that Shinshu Kamerei should only drink Hitogokochi anymore. Also, the toughness of the sake quality is highly appreciated here too: ☺️
