Sake mother CEL24 Sake degree -4 Acidity 1.4 Amino acidity 1.0 Rating (scale 0-3) (Item) Wine glass (Nose) +2 Apple, herbs, Japanese pepper, Nara zuke aroma (Appearance) Slightly cloudy, slightly greenish (Taste) Body 2 Acid 2, with a fair amount of malic acid Sweetness 2.5 Umami 1.5 Bitterness 2, with a tannic astringency that may come from the lactic acidity. Lingering chestnut-like sweetness and lactic acidity Impression: Sweet with complexity It has a complex taste with a mixture of nuances of shaved sake and amino acid complexity, as well as sugar and acidity. This was my first time trying CEL24, and I personally thought it was a sake that was difficult to understand what it was trying to assert. The lingering chestnut-like aftertaste, perhaps derived from the malted rice, is unique. I drank it chilled, but it seems to become sluggish as the temperature rises. It goes well with cheese.
