It has a complex taste with a mixture of nuances of shaved sake and amino acid complexity, as well as sugar and acidity.
This was my first time trying CEL24, and I personally thought it was a sake that was difficult to understand what it was trying to assert. The lingering chestnut-like aftertaste, perhaps derived from the malted rice, is unique.
I drank it chilled, but it seems to become sluggish as the temperature rises.
It goes well with cheese.
