I heard that Yamamoto is celebrating its 123rd anniversary this year! I wanted to do a "123rd Anniversary Sake" but I fell in love with Kijoshu....
The aroma is clean banana.
When you drink it, the liquid is light, slightly chili, and refreshingly banana! The pleasant citrusy acidity is followed by a deep umami.
The aftertaste is refreshing, like herbs.
If I were to draw a line to describe the flavor, it seems to disappear horizontally and straight without much blurring, with a thin vertical line. I like it.
This is delicious.
It has a nice flavor and aroma, but it doesn't go too deep, and it seems to cut off at the very front. I can drink as much as I want.
After a few days, when the acidity mellows out, it seems to have a strawberry-like atmosphere. It doesn't lead to sweetness, but it is berry-like? Strawberry? I wonder if it's a strawberry aroma.
It is also good with warmed ♨️ oden. The rice is slowly refreshing. A little bitterness at the end.
I enjoyed it very much.

I wanted to go for a commemorative sake for the anniversary, but it turned out to be this one, which is used for brewing commemorative kijoshu 🤣.
That's exactly what it was! The sake was consistently delicious from the moment you put it in your mouth until you swallowed it 😋.
