When opened 1st day, it pushes-pops.
On the 2nd day, when it is opened normally, it is rushed with a large pop.
The gasiness is medium.
Slight strawberry-like top-end
The same fruity but mild aroma as the first sip, the refined umami and sweetness of rice spread sizzling with modest carbonation, and the slight lactic acidity and a slight bitterness make it go down smoothly.
It is well-balanced, delicate, and deeply delicious. It has no sharp edges, so it is good as a food sake or on its own.
The second day was no different, and it is still deeply delicious.
It went well with stir-fried pork belly with black vinegar (Cook Do base) and Chinese soup with lettuce and shiitake mushrooms.
It also went well with dumplings, fried squid, and nodoguro tempura.
