What? Wine yeast brewing? I know it's a bad idea... but I'm curious... Three times I passed by the sales counter and went back. All of the sake is Echigo Gohyakumangoku, Junmai Daiginjo, and wine yeast is an adventure! I was curious to know what it tasted like, and I ended up buying it. Of course, it did not have the aroma of wine, but the texture was similar to that of white wine, and the aroma was sweet with no cloying taste that must have been carefully crafted. However, I don't know how to describe it... I should say that it tastes like a sake that comes right above the line when you try to enclose it in a line called "sake"...
