The chewy, lightly seasoned shinjo is a perfect accompaniment to the spicy XO shoyu!

This GOTH Watanune 50 Junmai Ginjo Nama Sake was my favorite of the day!
It is the kind of sake that spreads out in the mouth and leaves you wanting more!

The yeast used is M-310, a mutation of the Akari Ogawa yeast (Association No. 10) developed by Chikayoshi Ogawa of Akari Sake Brewery, which produces more ethyl caproate.
Rice used: 100% Shiga Watabune No. 6 produced in Shiga Prefecture
Rice polishing ratio: 50
Alcohol content: 15%.
