アラジン
This is a black, junmai daiginjo of Kubota brewed by Asahi Shuzo in Niigata Prefecture.
It was served at a work-related drinking party.
It is a standard year-round product of Kubota's 30th anniversary sake, and the brewery aimed to create a modern and sharp daiginjo by combining aroma, sweetness, and sharpness.
The sake rice is 100% Gohyakumangoku and the rice polishing ratio is 50%.
The sake degree is ±0 and the acidity is 1.3.
It was served cold.
The appearance is beautifully clear.
The aroma is a little sweet, but the straightforward apple-like ginjo aroma is richly fragrant.
The mouthfeel is soft, with a soft and reserved sweetness, followed by a rich ginjo aroma in the hints, but the after-flavor is short and disappears with a slight bitterness.
While the ginjo aroma is well developed, the quality of the sake is crisp, as is typical of Gohyakumangoku, making it a daiginjo that can be enjoyed by a wide range of people, just as we had hoped.
Thank you for the sake.
