Winter is in full swing, and the mornings and evenings are getting even colder. Our first hot sake of the season was Midorikawa from Uonuma City, Niigata Prefecture.
It is a regular sake, but surprisingly for the first time, I had the honjozo type, which is designed for hot sake. It is refreshing and has a full flavor of rice. Not too sweet and not too dry, it is the ideal hot sake. We enjoyed it with braised flounder for a luxurious moment.
