This sake is brewed with rice called kinchaku, an edible rice native to Ishikawa Prefecture that has been restored to its original state. Kinchaku is said to be an ancestor of Koshihikari rice. The sweet and sour taste spreads on the palate, and it is easy to drink without any curdles. After a while after opening the bottle, the acidity and gassiness subsided, and the sweetness came out in full force. The top aroma is sweet, and the taste is gentle and soft. I would like to drink it again.
