A bottle of Banshu Issen was uncorked!
I have wanted to drink this bottle for a long time.
It has a strong sweetness from the rice, and is very satisfying to drink. It is hard to tell from the label, but it has a clear lactic acid taste like that of a sake yeast yeast. In a way, it is like drinking yogurt in Japanese style. The strength of the acidity is more than the umami of the rice.
There is no ginjo aroma, but there is a slight scent of "sakiso.
It may be a sake that is best served with food.
It may be good when served cold!
