What do you think of this 3 year old raw sake (made in March 2020, so aged in a liquor store fridge)? The color is slightly yellow.
Room temperature. A maturing aroma like cemedine like alcohol rises up.
In the mouth, a sugary sweetness comes first, followed by a faint nutty umami, and then it finishes with a bitter or pungent taste.
45°C. The aroma changes from cemedine to grassy. Gently warmed with a swelling citrus sweetness like ripe oranges. This is heated up.
On the first day, the sweetness opened up slightly less at 50°C, but by the fourth day, 50°C is better. Difficult to tell.
I didn't expect much when the bottle was first opened, but it opened up well enough. Rather, the first day is the best.
The taste is mainly pleasant sweetness with a little bit of aged sake-like flavor, and it also shows a modern fruity face.
It is not reproducible, but I would keep it on hand and drink it casually.
This is the first of my fresh ripe-type challenges, and it was a winner. It is likely to be a sake that will leave a lasting impression, partly because of the Noto Peninsula earthquake.
